Cuisine[s] Michel Troisgros will offer a special lunch course inspired by the recipes from the book “La cuisine acidulée” published by Michel Troisgros in 2002 which was written under the theme of “acidity”, the key characteristics of Troisgros's dishes.

Complexe flavor of “acidity” brings out the flavor of various ingredients such as citrus peel and juice, vegetables, fruits, herbs, vinegars, wine and dairy products give light accent to the dishes and enrich the flavor along with the selected seasonal ingredients.
